I did think that that might be a thing so I marked a random flow as favourite…but it didn’t make any difference…still no options available.
I don’t have any favorite flows and all (manually startable) show up in the Shortcuts widget. So I don’t think that step is actually neccessary.

Are the flows, that you are trying to select, manually startable or are they initiated by a trigger?
Only the manual startables are available for selection.

There it was! I have never created a manually startable flow…have never had the need…but now I did one that enable me to turn on the main lights in the house. Just a start button and a “then” that turns the group “main lights” on. That flow showed up in the widget!
Thank you both for your help! Now I can show the wifie how she can turn on all the lights with one operation on her phone in the morning. 
EDIT: Also, I just noticed that the flow does not need to be a favourite. It seems the manual start button is the key here. Is this information stated anywhere officially from Athom?

“Favourite” seems to be an Android specific condition.
