How can I let my Homey “forget” it’s WiFi settings?
At first I had my Homey connected to my network using WiFi, now it’s connected by ethernet with the USB adapter. But now the Homey is connected using both ethernet and WiFi.
Go into Setup Mode, use the Ethernet Adapter and do not configure WiFi.

That won’t erase my other settings, etc.?
The documentation says, when in setup mode I have to tab “add new Homey” in the app.
Correct, but you won’t reset / Clear until you Choose to do so.
Just keep Settings.
Tested myself already multiple times, it works
