Which Homey App version are you using?
I had the same problem. But when I added a note it was possible to save without error. Afterwards it was also possible to change the device type and save it. This is not a solution, but can be a workaround.
Problem will be solved in the upcoming 7.5.0 release of the mobile app, according to Athom.

Correct although a combination of the “old” app and a newer Homey Pro FW version,
Error when change device type (Homey (Pro) 2016-2019 >= v10.0.2)
As the Mobile App is more an issue then the Firmware Changed the Topic title to mention the App version.
