Create a Virtual Temperature Sensor from MQTT temperature data

Hi. I’m new to the forum. Sorry if this question has been asked before but how do I create create a Virtual Temperature Sensor from MQTT temperature data generated by a SonOff TH16 (flashed with Tasmota).

Here is the MQTT data that it outputs…

23:29:19 MQT: tele/roof_exaust_fan_and_temp_sensor/SENSOR = {“Time”:“2020-10-26T23:29:19”,“DS18B20”:{“Id”:“3C01B5564EC3”,“Temperature”:22.9},“TempUnit”:“C”}

If this has already been answered or if there are any guides you can point me to that would be great …
