Restore Matter device after accidental delete?

Isn’t this how it works? Worth a shot:

Don’t try to add the Matter device to Homey, but (remove and) re-add it to the Hue hub:

This is a different behavior as when e.g. including Hue lights: those are visible as Matter devices immediately after the were included in the Hue bridge.
