As the title already reveals, when I try to select a document in the flow, I can’t find any…
EDIT probably this is the trick; however, when I add the ‘Google Sheets’ device to Homey, I don’t get to see this screen anywhere (phone, laptop):

I just tested it, I can’t “select” a file, you’re supposed enter the URL to the file yourself;
How to get the URL:
In the mobile Spreadsheets app, you can copy the URL (or ‘Link’) by hitting the 3 dots next to the spreadsheet (this might work with Google drive as well):
Next, tap “copy link”:
Now paste that link into the “URL to document” field:
If all went well, you can select the sheet to use:

But how stupid can someone be…
If a Google Sheets User device is created with one Google account and you then start creating a Google spreadsheet with another Google account, what are the chances of this working?
Zero, nada, niente, zilch, noppes, rien de knots, nought, geen ballen…!!!

Nah…I had to do exactly what you did: copy & paste. But once this path was inserted correctly, I could at least select the page (or workbook if you want). Before I always got a 403 or a 404 error.
I think this is gonna be one of my favorite apps…like making some nice graphics with the ecar data

Ah, I see. I hit the the dreaded “rate limit” after a while, so I tossed it quickly into the 
Tested with solar panel power data, which changes all the time. Not appreciated by Google
