Actually it created me a manual configuration device without the homey mqtt broker. So all good.

Which apps except for the Aquaro Homey app do I need to install and setup? I assume I need to start with the Aquaro official app on my Android phone?
Reading the Aquaro Homey app description I need the MQTT client app, but reading this thread here it seems I also need a broker, but I can only find the MQTT server app. Do I need 1, 2 or 3 apps installed (Aquaro, MQTT client and MQTT server) to get the Aquaro working or something completely different?
Is there a step by step guide somewhere on how to go from unboxing the Aquaro device to getting it setup and working with Homey?
Yes, from there you need to add the sensor and perform the setup, including MQTT settings (for Homey assistant)
Settings –> Homes –>… –> MQTT Home Assistant Integration
You need both - The Aquaro device publishes to an MQTT broker (Mosquitto, Home Assistant broker, etc.) OR Homey MQTT Broker, like MQTT Broker | Homey -you do need to install, configure it (specify user, pass and port) and run it
and MQTT client - eg. https://homey.app/en-us/app/nl.scanno.mqtt/MQTT-Client/ - here also you need to install, configure it (specify the broker user name and pass to connect to, like above).
And as last step, you install Aquaro and add device - it shall discover the device automatically.
So the working setup is:
Aquaro device → publishes to broker.
Homey MQTT Client app → connects to that broker.
This Aquaro app → subscribes via the MQTT Client app API.
