If I would turn homey for a factory reset, what settings are/wil be saved on my computer and are recoverable?

Nothing is saved anywhere else then on your homey itself.
Unless you use any of the backup apps (that can only partially recover anything, IE: the flow backup can backup all your flows, but you will have to repair all flows with a device in it) you will lose everything.
A real backup feature will come after homey v2.0.

None you will start from schratch.
There is a app to save your flows, but your devices are gone.
