Starting over from scratch — advice?

I currently have a Homey Pro (2023) paired with a bevy of smart home gadgets. I also have various Google Home devices, mostly for voice commands (Nest Hub Max, Nest Wi-Fi, Nest Audio, etc.). I just bought a new router (Nest Wi-Fi Pro) which is going to necessitate I set up my home network again. I’m taking this opportunity to completely re-do my smart home setup, with Homey at the center of it all.

Is there any advice the hivemind here can give me on this process? For example, is it better to connect things to Homey and then connect them to Google or the other way around? If a device has Matter support, should I always connect via Matter, or is it sometimes better to use that device’s app? Should I make a specific sub-network for smart home stuff (I think this is a feature of the Nest Wi-Fi Pro)? Any and all advice is welcome here! Thanks
