so i have to deploy moskitto broker and z2m, what di I need on homey shs? mqtt or z2m?

On homey itself just the Zigbee2MQTT app from the Homey App Store. That connects to the broker. You can install mosquitto and z2m anywhere but iโ€™ve installed them on one and the same pc.

Yes, you need z2m with a zigbee stick ( i use sonoff but more brands will do of course), and a broker like mosquitto, and homey with the before mentioned app. In short, homey talks to the broker through the app, the broker talks to z2m and vice versa. If you search online you will find many manuals\tutorials on how to do this.

so this self hosting homey might be a direct alternative to home assistant which i run as well (both on ms hyper-v server) . in addition i have homey pro 2019. and homey bridge. plus cloud. the homey pro will be linked and the cloud tenant decommed. bridge then linked as well

i already see that selling value of a bridge went up, even the old 2016? pro might be reused as a smart device server for centralised self hosting homey.
