Is there a way to connect this app to HomeyPro so that I can program a smart socket to stop when the batterij is 100%?

Don’t know about Gazelle Connect.

I charge my Gazelle bike through a plug that has energy measurement built in. When energy usage sinks below 1 W it means charging is done and I cut off the switch.

See Flow Example. I start the charging through Siri when I am in in the bike shed.
