I’ve been digging on the Viessmann forums and it seems a global issue with every integration with the Viessmann API.
Viesmann has removed write access to the API, without communication. We don’t know if it is a bug or an intentional move. They did not communicate at all on it.

Unfortunately there is not a lot I can do at this moment. This will apply to all integrations of the Viessmann API, and also for the other ViCare integration in Homey.
@Doekse , maybe something Homey itself can help out on and try to get some info from Viessmann?
