When you can see your zigbee device (which is paired with an external Tuya zigbee hub) in the iot platform, you should be able to control it with Tuya Cloud app. Because the iot Platform is “in the cloud”.
I think using ‘raw commands’ for a thermostatic knob is more practical than with Smart Life scenes. You can find a link to ‘raw commands’ how-to in the opening post of this topic.
While @RonnyW added the thermostat device to the app, maybe he can/would like/has time somewhere to help figuring out why your knob doesn’t get recognized as device yet. Maybe it has a different “Product category” code.

On the other hand Erik, did you try to pair it directly to Homey with the Tuya Zigbee app?
