Is it possible to redirect somehow the syslog of the homey pro, to a different system or a DB?

Nop,
there is no Log available for the user.
You need an App for that, but that will only log App Logs.

You can use the Simple Sys Log app to log (from flowcards) to a syslogserver (or just the app itself).
There is a script to add flowcards to all your flows.
That way, flows are at least fully logged to give you insights.
