Können Sie die Firmware-Version während des Setups überall auswählen?  
Es befindet sich hinter der Schaltfläche ‘Optionen’.

Das Backup enthält keine Firmware. Deshalb ist auch ein Reset notwendig, bei dem die stabile v7.3 Firmware heruntergeladen und installiert wird, auf die Sie dann Ihr Backup wiederherstellen. Es spielt keine Rolle, ob das Backup mit Homey unter Firmware v7.4.x-rc.x erstellt wurde.
